Knife question

I’ve got a son who is in AmeriCorps (like the Peace Corps but you stay in the U.S.). He is out on the trail 10 days at a time. What is a good knife to get him for basic meal prep (slicing, dicing, etc.). Ideally, the knife would either fold or have some sort of a cover to slip into and out of, also be light enough for backpacking.

I'd get a shorter (7-8-inch) chefs or a santoku (6-7-inch), probably the former, along with an edge guard or knife safe to protect the edge during transport.

I don't find any single knife too heavy for backpacking (though I prefer the lighter Japanese blades for use). I'd likely look at something from Tojiro, perhaps their 7- or 8.3-inch gyutou (chefs) or their 6.4-inch santoku.
 
I usually carry two knives with me, 1 is a K-bar for utility use it stays in my pack. The other which I use for food prep or other fine work is from Cutco. They don't have the model that I use any longer, but I would recommend this one with their "Double-D Edge"
 
For packing - do a search on "Kershaw Blade Trader" this is a line of of knife "kits" from Kershaw that has inter changeable blades. I bought a set for parents well over 10 years ago for use in their RV. It was the deluxe set with a really nice roll with 6 blades and two handles. They loved it so much they even use it in the kitchen at home. Much less bulky than carrying multiple knives.
