Just started another butt


 
Just put this 7.62 lb pork butt on at 6am. Used the Mr. Brown rub. Let it sit for about 10 hrs in the fridge with the first application of the rub, then re-rubbed before throwing on the smoker.

That butt is probably the max my little joe can handle.

Well after 10.5 hours I just pulled my butt. Had trouble keeping the temp consistent in the Smokey Joe, ash buildup was bad. So it ran between 220 and 260 through the smoke. It was at 186-192 degrees in 3 places when I wrapped it. Now the hard part, staring at it for a half-one hour as it rests. That will be me drooling in the chair.

Travis that is a sprinkler system I installed on my front porch. I don't like watering plants so I automated it. Actually I used to use Kingsford to melt aluminum with forced air.

This is the pork all pulled. It came out juicy and really good. I dunno if I will be doing one quite so large on the little joe again. But I did it and now I have the t-shirt, plus plenty of leftovers. I think I may use that bone to make a nut for a guitar I have been building.
