Just picked up an 18.5" WSM on craigslist

$175, box never even opened. Now I need to figure out what to do first. Would like to stick to poultry or beef. I would appreciate any suggestions. New to this board, and I can already see that it is an awesome resource.
 
Kevin, congrats on the CL score! a lot of people like to start off with just a dry run, just to kind of get the feel of the way the WSM functions. Myself, I jumped in and put 3 racks of baby backs on the top rack and let 'er smoke!
Follow the BRITU (best ribs in the universe) recipe and you will be hooked!

I agree with Tim. You made a great score now fire it up, throw some ribs on, sit back and enjoy a brew while you WSM does its job. Then in a few hours you can enjoy.
 
Kevin, 1st WELCOME to the place. You are one lucky guy. I am sure that you have studied all there is to study about how to proceed. Don't worry tho there will always be more to learn. My 1st cook on the WSM was a beer can chicken. I would also suggest a butt as they are very forgiving in regards to temp. What ever you choose it will be good cause YOU cooked it and it was cooked on your NEW WSM.

Nice find.

I agree with doing a "dry run" first just so you can concentrate on temp stabalization without having to worry about cooking anything.

But ... beer can chicken or a chuck roast would be a good starter cook.

Great pick-up! I picked my 22.5 recently and jumped right in with 6 racks and they came out great. I found it pretty easy to control, I used water in the pan and hovered between 235 and 260 with minimal vent changes. I actually found a WSM on Craigslist when I first started looking a couple of months ago but didn't know very much about them at the time and was looking at BGE and a Traeger. I then stumbled upon this site did my research, by the time I was ready it was gone, similar price. Make sure to post pictures.
