Just got the WSM fired up for the first time!


 
I just recived my 22.5" WSM on Thursday, and just got done throwing 2 chickens on it about 15 mins ago. I have been using a electric smoker the past year or so. So using a charcoal for the first time is new to me, but it seems like its going good and the temps are holding.

Can't wait to eat some chicken tonight!

You're going to ask yourself "why did I wait so long to switch" I love the chicken cooked on the WSM, it tastes fantastic
 
So everything seemed to go good but one question. I put my maverick grill probe on the grate and it was reading 300 degrees while the WSM gauge was reading 275. I tested both on boiling water and both were dead on. Has anyone had this issue? I'm just trying to figure out which one to go by for future smokes. Thanks!
 
Jeremy, yep that sounds about right. The lid temp ,based on my experience, is always lower than grate level mainly becuse you're closer to the heat source.The best advice I can give is pick one,either dome or grate and stick with it. Myself I drop the probe down through the top vent so the tip is about 6" into the chamber that way it kind of splits the difference and isn't affected by the mass of the meat.
