Just got the Bullet

Hi all,

I received my bullet via UPS last night and I have a few words to say about it. First of all, it was a cinch to assemble except for trying to get the access door to be 'fair and square' against the rest of the cooker. I finally gave up(more on this later). With my assembled cooker together I went to the shop to grab some ribs...I found a good set and came back home.

I fired the Weber up with some good 'ol lump charcoal...

After a bit 'o rub and kisses I put the ribs on the Weber. I overfilled the pit with lump because I HATE throwing more fuel on the fire.

I checked every 2 hours or so and everything always looked good.....after 9 hours I took my ribs off, they're perfect!!! I had to call friends over to grab some grub....This is the easiest smoker ever! I used the same rub I've always used..the same meat....and half as much time. These ribs are the best I've ever smoked....and it's the first time with the bullet. Thanks Weber!

Oh! I'd forgot....the access door doesn't seem to matter as much as I'd thought. Although I'd like it to be airtight, I think it serves a purpose by letting a bit of air in...(and smoke out). This is an Awesome smoker.

I tried that Doug D...I just couldn't get it to fit as well as I'd like. I have a slight misfit between the middle section and the bottom section also...it's very slight though. Those are a couple of things I didn't expect with the price I paid for the bullet but they didn't discern me. I was about to pay $800 for the BGE. It's still the best smoker I've owned.

Your WSM will work fine even if not absolutely airtight. Don't view a bit of smoke escaping from the door or the lid as critical. There are other articles similar to the door adjustment one that may help with the middle section.

Thanks for your advice Doug. Let me ask you another quick question..

.. The handle on the access door doesn't seem to close right. When I got the Weber, the door and the handle were in two pieces. Is it supposed to open and close easily left and right? I have to keep adjusting the screw behind the knob as it is now.

thanks!

The order of assembly of door handle hardware is like this. Turning the knob clockwise-only will keep it from loosening. Over time, when it gets a little crudded up, it will stay tight.

BTW, the BBS admin will likely point you to this post. Just so you know.

9hrs for ribs? WOW....low and SLOW!!

BTW...my access door doesn't fit air tight on my WSM. I have never had any temp control issues! No worries mate!

Slow is right!

I've always been a fan of lazy cooking. As that Ronco guy says I just set it and forget it. I'll check every couple of hours to make sure there's still heat and add lump/water accordingly. Otherwise, I'm hands off. This smoker makes it much easier than the rest I've tried.

I just worked up the courage to try bend my slightly out of shape lid after reading this post, I measured the mid section and it's perfect so its definatly the lid so I went outside and gave it a go and crunch crack and a few chips of porcelain fell into the lid. I had a close look and it only chiped from the rim slightly but now the lid fits spot on, well worth the risk as before this the lid had to be pushed into the mid section but now I can see how it should have fit. Thanks Doug for the link.

Bren..

I just use a bit of foil....put a piece doubled up thats just a bit bigger than the side door..put it on and then put the door on over it....then crumble up the foil at the edges pushing it back up against the edges of the door...seems the keep 99% of the smoke from coming out of the door. I do the same sort of thing I make a rolled up piece that I put where the mid section sits on the charcoal bowl and for where the lid section sets on the mid section and that pretty much keeps it airtight except for the bottom vents and the top vent. It all works out well. Thx
