Just Did My First Smoke

Used the Apple brine from this website with Kingsford (one chimney lit with one chimney unlit into the charcoal ring)and two chunks of cherry (dry) with a small fistful of Jack Daniels chips (soaked). Turned out great, though I was a nervous wreck and checked temps every 15 minutes. Took the darn thing over an hour to decide to settle down but once it did it performed like a champ! Temps stayed at 300 per my therm (so actually 325. Yes, the therm is off and thank heavens I checked it before the cook). I'm hoping that as I build some seasoning into it my WSM will steady out and be the champ it showed to be today. Can't wait!

All-in-all a great first experience. Ribs next (per hubby's request)!!
 
Linda- just went to the photo gallery and saw your pics, wow. that bird looked so good, dark mahogany skin, beautiful color.
how did it smell while cooking? I smoked ribs yesterday (first smoke) and can still smell it

It was funny, because my neighbor was smoking ribs at the same time (started his cook earlier in the day than I did) so we were getting smoke smells in stereo. Loved it, though!! Smelled great!
