Well, all the talk and pics of fatties on here got me wanting to try one. I really enjoyed making this (the bacon weave was fun). I wasn't sure what to put in the middle but here it is....... It is currently on the Performer

The sausage rolled out....2 lbs of Tennessee Pride


The toppings I went with.....cream cheese, 4 cheese blend and a turkey sausage. I know, kinda weird


Here it is rolled up


and ready to go on the grill


Got it going with some applewood.

Thanks for all the great post and tips on here for fatties. I never would have thought of the baggy for rolling out the sausage and that will also come in handy for stuffed meatloaf.

Hopefully I will have a great finished pic to show soon.

Ok, here it is finished.

Not quite as pretty as the before pics. The bacon burned a little when I went to crisp it, although it's not as bad as the picture projects. It was still pretty good

No plated pics. I got so wrapped up in doing the fattie and uploading pics, I didn't do the side I bought to go with it.
It wasn't too bad but I need to work on the cooking process a little bit. I think It would have been easier to slow smoke it then "grill" it.

I would also like to add some egg in the middle. Not sure how to do that if anyone can tell me

Nice pics, Rick! I have never actually done a fatty before, but I will be trying one soon. As for the egg idea, the only things I could come up with were: 1.) beating an egg or two, then brushing it on the inside of your ground pork before or after adding any of the other ingredients; 2.) adding some whole or sliced up hard-boiled eggs as one of the fillings.

Just a few ideas, but those are the things I would try, if adding egg to a fatty.
