Turkey is spatchcocked, seasoned without salt, and sitting in fridge so, hopefully, the skin dries out a bit. Need to put together the veges and liquids going in the drip pan. Going on WSM 22 late tomorrow morning. I’ll give it another shot of seasoning before it goes on the smoker.
During and post cook pics. Cook worked out well, WSM22, Weber briquettes but started with lump using 2 chimneys, 2 chunks apple and 2 chunks cherry, 3.5 hrs total cook, 325 for first 2 hrs, 350 last 1 hr 30 mins.
