Made jumpin jims thighs today, family and I loved them. the were tasty, tender as well as juicy. First time, definitly again.
I cooked them on the lower rack, no H2O pan, then put in the foiled pan with BBQ sauce, pineapple juice, chicken stock, simmered (top rack),then crisped them up over the coals before eating.
Could you do something like that with "thick" pork chops ? Of course the cooking times would have to be adjusted. Any thoughts ?
