Jumbo Wings

I am not sure if this is the right place for this question, so if it's not I apologize.

I have been working on a wing recipe with a dry rub. I smoke and then fry for texture. All of the wings I have been using are too small. I know there are some "jumbo" wings out there somewhere and google doesn't provide great sources for them. I thought I would post the question ... Where can I buy good "jumbo" wings?

Mike

Local Butcher maybe? I think most typical "farm chickens" are larger then the store bought mass raised type. If not atleast he could point you in the right direction.

Do you cut your own? I always buy whole wings and cut them myself. I usually don't have too much of a difference in size. I cook them exactly the way you do. Rub, Smoke, Fry, Sauce, Eat. Are they drying out?

Mike,

I'm not familiar with jumbo wings, but if you're intent is more meat, then I'd recommend switching to drumettes. That's what I've been using for some time now. They have more meat than a wing, but are still basically the size of wings.

How long do you guys smoke and at what temp? How do you fry them and how long?

Sounds great, I wanna try that? Also I was at Walmart yesterday and they had the brand Pilgrims Pride in regular wings and JUMBO wings there, and let me say they were BIG and yes they were chicken.

Hi Mike - I think Townsend is selling wings from roasting chickens as Jumbo Wings. Nothing wrong with it but it surprises me that they could afford to sell in those large quantities. Most of the time cooks buy whole and not parts from roasting chickens. Bob

I wish my local Wally World would carry the jumbo wings. I have never seen them there. A bar and grill close to me has them on the menu.

Nothing I hate any worse than a trip to Walmart but for a chance at Jumbo wings I will go

from Townsends online
we have our product in the jetro / restaurant depot store in richmond.

our direct sales are for 250 cases and more.

Anyone want to buy 248 cases of wings ;-)
