I did some Jerk pork tenderloin at the request of SWMBO. I started with a 1 lb tenderloin and cleaned it up and trimmed it a bit

I hadn't had a chance to use my new injector yet so I thought this would be a good opportunity. I mad an injection of Red's Apple Ale, tamarind concentrate, honey, and Penzey's Jerk Pork seasoning

Then I rubbed it with some of the Jerk Pork seasoning

I smoked it over cherrywood at 225 for 2 hours
