I cook chicken like that every Sunday.......looking awesome.
Fever Tree also is my preferred mix, quality drink....also didn't know grapefruit was an option.
Got 2 new to me jerk spice / marinade.......and some old school Oakridge jerk rub still......gotta get on it round here.......haven't had jerk in ages.
Maybe I can inspire you to make some hot A&$ jerk chicken?????

I just made a chili sauce. I’m going to experiment with a chili sauced chicken soon. If it’s too hot, I’ll have to eat it all as no one will help. Need to be mindful of others in the abode.

SPG, cayenne, celery seed and paprika. And once all applied, sprayed the skin with avo oil.

This. No fancy rubs or sauces. Chicken halves seasoned up and cooked with real charcoal, no briqs. Before grilling went upscale, this is how we did chicken. Basic and no fussing.
