Whew, that was an interesting cook.
Put them on around 8PM, Minion'd the start with a full ring of Kingsford and about a dozen lit coals. Added some Hickory chunks for smoke, assembled the WSM without the water pan - I was trying something I saw on another forum. Got the temps stabilized aroudn 250* lid temp, went in took a shower. Went back out, cooker was at 300 lid
.. closed down all the vents (except top) and waited, to no avail. Finally, I prepped the water pan (with foil) and got a gallon of cold water ready. Pulled the top rack (butts and all) off the smoker, put the water pan in, filled it, rack back on, waited 20 min. Temps stabilized at 235* and stayed there all night. Woke up at 6, butts were in the mid-160's. They *had* to be ready by 11AM for an hour rest. So, I wrapped them in foil and back on the WSM (first time finishing butts in foil.) I'm happy to say they came out perfect, as always.
60 people loved them. Made a fresh batch of Carolina Red (everyone goes NUTS for that sauce when I bring it in.) What a lunch!
