No problem with me Bryan, I chide you about it but it doesn't bother me...I'm pro-choice in all regards, for people, places, and things...

It *IS* labor day let us not forget, and it makes more sense to have 23 beers on Sun., than it does on Mon...if you need to go back to work early Tues., there's no denying that...

Get some R&R, I'll save my Qs...for after you're recovered...

BTW: we're low on fish this labor day weekend folks, somebody must have done some fish, no?????

We're a little light on chicken, but there's a nice spread of meats, that is what the 'que is about. I have to vote LarryR's Wagyu tri-tip as the winner of one of the finest looking pieces of meat, that was superb! I have to ask about Wagyu at Whole Foods...I hope they carry that stuff, even at this prices...

I'm a sucker for animals, I used to give my cat rare roast beef all the time...but don't have her anymore...I used to live with some folks that had a Siamese, and it did get a whole chicken off the counter and to the floor, and was gonna try to get it out the cat door...cats like meat...

There was recently a pic of a dog shaking a big hunk of meat recently, that was a great pic...I'm not sure if that was your dog or not...

Ok, enough if this...FISH folks...we need some fish to round out this Labor Day, someone has to have cooked some fish...I know you're hiding out there!!! Another thread is fine also, let me check to see if anyone posted fish pics...

Did manage to smoke a gyro today....the neighbor had beer can chix and ribs on his WSM, so the day was not a total loss....

I have been so busy I didn’t do any over night cooking this week end . Sunday I did cook some burgers and baby back ribs. I had some Texas Wild BBQ Rub to try , (Thanks Larry D ). That is a pretty good rub. I did let them over cook some while I was busy talking. Cooked them at 265 the entire cook , smoked with cherry and Jack Daniels chips. Didn’t foil this time and the ribs were outstandingly tender. That was the best bark and juicy rib I have cooked un foiled. No pictures guys, you will have to take my word on that..

Ok, the night is winding down and I need to clean things up...turned out pretty good. This was the first time to do ribs in the WSM, as well as a small shoulder butt.

Ribs seemed to be better liked by my family, the meat really did fall off the bone for most of it, but some of the very ends were a bit dried, I could have foiled them. These were a great 1 attempt with the WSM for ribs, and the shoulder-butt also...which I think came out very nice, moist, decent bark, very nice indeed (my lunch tomorrow, told the kids they could take the ribs for lunch tomorrow...school started a week or two back...

Alan, that PP looks awesome, very moist. It's been a while since I've done one . . . have at least 10 lbs that I've cooked and vac. sealed sitting in the freezer. Nice job.

Other pics look great too, especially Bryan's. Reminds me I need to to some ABTS again too. So little time, so much Q to do . . .

I cooked somr fish and posted pics on the grilling forum.
