Italian Beef (Hero ?)

Italian beef recipe link per Bryan S, earlier this week was great.

Cooked a 4lb Bottom round roast per the recipe kinda didn't get to 450 degrees on the WSM but everthing came out fine. Cooked it yesterday, took off the smoker and chilled in the freezer a while then refrig. sliced thin with a knife last night, sure didn't look like much when i sliced it last night.

cooked up today with liquid per the recipe, came out very tender 7 tastey. Softened some peppers and onions a little in the frying pan, then finished in the meat & liquid in the pot.

I left out the fennel seeds as Bran did, not a big fan of fennel. Also since Bryan indicated he had a little trouble getting some color on the roast. I put mine right on the lower cooking grate no water pan, colored it up, then put the on the top cooking grate for rest of the cook. Caught some of the juices in a foil pan under the roast.

Family loved it, I look like a hero in my family's eyes thanks to you guys, on the weber forum.

John, Glad to hear it came out good for you, and everybody liked it. The hero sounds great but... Where's the pics at?

I don't have a digital camera, my brother does, but, he didn't have it along.

At any rate I can't get over how good and tender the bottom round roast was.

I was concerned about the tenderness because my mother who is 85 yrs old, won't eat anything unless it's very tender, and it passed the tenderness as well as the taste test, with her. wish I would have bought 4 instead of 2 roasts while they were on sale.

you know if it wasn't for you and your post on the italian beef etc. I would have never made it, so thanks for posting about it. And I agree a picture is worth a 1000 words, as your pics helped convince me to make it. I'l try to get some pics in the future.

I'll certainly make the Italian beef recipe again.
