interesting brisket day

well started with a 5.5lb brisket. had my new brinkmann water pan and maverick therm. put a chimney and 1/2 of Stubbs briquettes good amount of Oak and a little apple.. piled on bout 20 lit briquettes and filled the water pan.. all rolling at 8am. all was going great 220 too 230 no problem, then bout 11am i took the lid off too add some mop and my temp soared!!! up too 265. i allready had the vents only open by a quarter soo there was no where too go..i continued too 3pm as brisket hit 185. foiled and pout in a cooler and served at 4pm.. good smoke ring and flavor, little dry but not unusual for a small briskett, just dont get why my temp skyrocketed, but such is life and BBQ.. later folks have fun
