Injectiing a Pork Butt?

I have never injected my pork butts, and was thinking of doing so tonight. When you have injected your butts is there a big difference? Is it worth the extra step?

I think you're going to get mixed reviews here. I've had very good luck with injecting pork butts and do it on all mine. I use the six time world champ. pork butt rub and injection. I differ however on how I inject; I wait until I've gotten my butt on the WSM grate and then start to inject, that way the injection isn't washing off your rub as you will get injection escaping from your butt. I'd say only about 1/2 to 2/3 actually stays in the butt. I do not believe it adds any moisture to your final product but rather additional flavor. In my opinion it's worth it and it's very little effort.

Some have reported experiencing "mushy" pockets of meat when injecting.

YMMV

EDIT: After reading this it just sounds wrong, LOL.

Yeah I had to read it a second time as well lol

I know the recipe you are talking about. I was going to use apple juice, honey, and some of the rub I put on the butt.

I have only injected a couple times, that sounds really good as well, but I usually don't. I agree with larry's comments that it doesn't really help with the mositure of the meat but just the flavor.

My preference is to use a finishing sauce instead of injecting but give it a go and see what you think.

I am cooking these for a party, and sometimes worried about trying new things without testing them first. What to do?

If it was me, I'd do an extra butt (over and above what you had originally planned on) with the injection and do a side-by-side comparison. This way if it flops, no big deal as you've got the original, if it's a success, then you can see how it compares. Best of both worlds!

I injected the ones I did this weekend - my first attempt - my lessons learned would be to tie the roast and let the rub settle a bit then inject

the moisture was the same as it always is - but I think it led to the flavor of the interior meat being a little bit better and I still had a pretty good bark on it

Good call, I actually put them on the WSM rack and then start injecting as my last step prior to assembling the WSM, otherwise it washes a lot of the rub off (as you experienced) your butt. I'm with you, I don't notice any difference in moisture but does seem to kick the flavor up a bit.
