Initial Temperature Control Question

Hey guys,

I have a question. Very new at this but have been using my WSM pretty often. What it the best way to get your initial temperature not to exceed 170. I smoke fish and want to to remain low.

1. Do I control the initial temp by only using a few coals.

2. If I only light a few in the center but want a long cook what stops the other from getting hot to quickly. (Unburned coals)

2. Do I just wait until it drops and stabilizes before cooking.

Any other tips or tricks would be appreciated.

Please note my settings:

A. All vents were closed on top.

B. All vents on bottom were closed as I was using an automatic temp controller.

I've never smoked anything that low.
If I was, I'd start with the top vent fully open. I'd light it in one place with my weed burner, then put the WSM together right away. I'd run it with one bottom vent open, until it got to about 150F, then close it and let the ATC take over. If it were to overshoot, I'd start closing the top vent until the ATC could control it.

Good luck.

Bob

I've smoked lots of fish never but never did them at that low of temp, usually in or around 225 is fine.................d

How about set the fuel in a circle with a gap on one side like a "c" shape. Place two rows of fuel all the way around and adding one more row atop those. As long as the "c" is a thin line of fuel it won't catch too many at any one time.
