Incoming cubanos for supper

Centre cut super lean pork, not my first choice but I bought about 7 when they went on sale….super cheap….about 7.50 for 2.5 to 3 pounds.
Tried something new today….made a 4 hour marinade…it was basically what the rehydrated chili portion is like before you add stock when making birria.
Lots of rehydrated chilies, some of that water, citrus, vinegar, olive oil, cumin and lots of garlic.
Blended, sat for 4 hours….added an al pastor seasoning before the grill.
Cooking it up at 300 with other stuff for mid week meals.
Cooking to about 140 I think, try to cool it off and slice it up with the usuals in the pics with pickles n mustard sauce….adding some Al pastor hot sauce to this I just picked up with lots of orange notes….its about a 5 out 10 on heat.
Only side is these killer pickles I recently picked up…..salty and awesome…..

We don’t get Cuban type bread, I found some French minis and pressed we did…..
This was my best Cubano yet.
Hot sauce, mustard and mayo for the sauce…..
Toasted the inside of the buns for that crunch inside and half melted the cheese as well with the broiler.
