In a pan or not?

First time smoking a turkey. You putting the bird in a pan or right on the rack when smoking it? Can I put vegetables in the bottom rack as well?

We kind of went down this rabbit whole a little bit.
I am a fan of the bird on a rack and not sitting on the bottom of a pan, so I am going bird on top rack and empty pan on lower. So many guys here do Rotisserie poultry with potatoes and veggies underneath, so yeah I think you can do veggies under. If you don't want the drippings on your veggies you could put the turkey on the bottom rack (as long as it fits) with a foiled water pan that could catch the dripping and veggies go on top. I did this in my WSM 14 with a whole chicken and onions, peppers, and tomatoes to make chicken quesadillas and it worked perfect. It was a little harder to manage with the bird being lower, but came out perfect.
I am not sure what you have to grill on, but I am planning on doing my 7 lb bone in breast on the WSM 14 and a big tray of veggies on the 22 in Master Touch Kettle.
