I Like Big Butts

Felt like doing an overnighter again this weekend so I had the SO pick-up a couple of butts on the way home and she brings me two 13 lb monsters. They were so big I threw them on the K vs. the WSM. The grate they're sitting on is 18 1/2". Looking like a 24 hour cook to me.

The butcher I go to had pre-trimmed these. I think they're selling the majority of these for tamales right now so maybe thats why he's trimming them.

They're really moving along nicely; pit has been steady at 230 all night (got to love Stoker), and after 9.5 hours I'm sitting at 161.7 and 168.4 and probably getting ready for the plateau. I probably should have put them on the bottom grate but I prefer how things cook up in the dome.
 
13lbs trimmed ... holy hog Batman, they should have been even bigger!

nice ... yeah, I was wondering if you scalped your butts ... I used to but stopped .. it took a while but I got reprogrammed about the joy of eating/cooking with fat

hey I'd love to see some carnita pics if you have time .... it's one of those things been on the todo list for a long time for me
 
Actually the coals are pretty far down in the K. I added a new picture. I only loaded her with about 1/3 bag of Rancher (see updated pictures). If you look closely in the "fire box" there's a huge piece of Red Oak that probably took-up almost 1/2 of the space for Rancher. Not to get off topic from TVWBB but the K can hold temps like crazy and run forever on very little fuel. I'm also running her with my Stoker which keeps the temps spot on. Haven't touched her other than flipping the butts. Went X-mas shopping this morning and Stoker Log send me emails and graphs every 15 minutes on pit and meat temp. Came home when she hit 185 to check for doneness. She's got about another hour I'd guess.

Time for a beer!

EDIT: Hmmmm . . . OK, 1.5 (and 4 beers) later she's still not done. Oh well, may as well crack another beer. Starting to worry a little bit about fuel, don't think I loaded her enough for anything over 20 hours.

EDIT II: Damn, I could have stayed out there for another several hours. Just pulled them off the cooker, 19 hours. I think I barely made it in terms of fuel. Smelled awesome!!!
 
man... i'm beered out and that freakin briskit fooled me. dropped at 184 to 178.........and stayed....and stayed....just now back to 188 and about a degree every 30 minute. ...uh..... .... zzzzzZZZZ .....zzzzzZZZZZ...uh.. im still awake though. how u doin?
 
God I am so full, ate dinner and then I've been picking as I've been cooling and vac sealing, I'm swear I'll never eat pulled pork again

Turned out great, un-believably moist. Huge butts, huge, I'm amazed how quickly they cooked.

Dan I'm beer'd out too, couldn't drink another one if I wanted to. Will sleep like a baby tonight . . . a very full baby

for the record, I like butts too, especially the J Lo type...

I have not smoked anything in about two months, just have not had the time...

However, next week I`m hosting a Christmas party for some co-workers and I can once again smoke some butt.
