I got mold on my Beef Jerky


 
I have always had to put mine in the fridge or freezer for long term storage, I got white mold after about 3 days, that was using a jerky kit. Sticks and everything gets put into the fridge these days. have read to wipe with white vinegar, I toss it.
 
#1 is what you want to use because you are cooking/drying it till at least 160 int temp.
#2 is for hanging and air drying salamis, pepperonis etc.


Ok, I double checked. I do have and did use #1: Sodium Nitrite.

I think the recipe is flawed, likely conservative since you can poison yourself if you screw up. The hunt is on for a new recipe, I have a lot of select eye-round roasts to make.
