I found myself reading not listening


 
Like it says over the years I found myself reading all this great info but not listening. I alway's went back to my old ways as in rubs, bbq sauces and cookers. Now I listen and apply what I'm learning and my smokes are getting so much more to my liking so thanks all! It's fun to try different things. Some good some not so but at least I'm learning what I like and don't.

One big thing I have learned is that the WSM is the way to make fantastic "Q". My offset (Bar-b-chef)is very hard to control even with all the mods that have been recommended and done. So I figured hell I'll find out what this WSM thing is all about and I ain't turning back. Two fantastic briskets out of two. Can't beat that. I was reluctant to buy the WSM because of my cheapo Brinkman experience and looking at them and thinking they were the same (big wrong). I'm thinking of buying another. Maybe the larger size.
 
I think getting good at BBQ is a lot like wine tasting. When it comes down to it, what you really want to know, and learn, is what tastes good to you? And to know the why and how to get to it.
 
Tom, I agree with your comments. I would also add that those with experience and a broad background in cooking will lead you down some unexpected paths of flavor (and texture, presentation etc.). It can be a journey rather than a destination.
