How would you arrange chicken wings on the WSM 14?

Hello all. I'm smoking 36 chicken wings for a fantasy football draft party this afternoon and just have a quick question. I have 2 chicken wing racks that stand the wings upright, each holding 12 wings. I'm thinking I stand those up on the top grate, with some of the smaller wings on them, and then just lay the remaining 12 wings on the bottom rack. Since the bottom grate seems to be a little hotter and cook faster, I will put the larger wings on the bottom. How does this sound to you all? When you do wings, do you go by time or temp?

Hi Troy. if you're willing to change your plan I would do as Timothy recommended. I've just never seen a wing rack before. And, honestly, I never do wings on my WSM; I use the Kettle with high heat because my objective is more of a crispy, or a "snap" to the skin.

Fletch and I are in greater accord with using the kettle, I prefer the Vortex in the 22” and you can get 30 wings on that with ease.
40-45 minutes and they are done and you will have enough fire to run a second batch without re fueling.
