How to use thermometers

Since I am a super rookie I need to know how to use the thermometers. What worries me most is the non metal portion of them melting in the heat. I know not to put the display in the smoker but what about the plastic around the probe and the wires that run to the display?
 
So I found a different thread and I understand how to monitor the temp at the vent because the probe is the only thing on the inside so I'll rephrase the question to just grill temp. Is it as simple as sticking the probe in under the grill lid and leaving everything but the probe outside?

yes. assuming you have a probe attached to a wire that attaches to a display. you just feed the wire under the lid. be careful not to set the lid down to hard.

there are other ways and you can read a lot about those ways here (search on eyelets), but under the lid will work. You just need something like an aligator clip in order to keep the tip of the probe off any metal and where you want to measure the temp.

hanging the probe through the top vent is also an acceptable way to measure the temp. just make sure you're not touching the food which obviously would give you a false reading of the pit temp.
