Anyone have tips or procedure they like for folding foil pouches such that you can undo them for checking doneness or temp without ripping it to shreds?
I've tried various ideas, and I can get it sealed up nicely, its the undoing and being able to re-do that is my problem. I especially had this problem when I attempted to double foil the bottom layer for a high heat brisket cook. I ended up with a mess and juice spilling every where when I opened it up to check for doneness.
I am using heavy duty foil.
