How to do Chicken Breast

I just did my first cookout on the WSM. The brisket turned out great, but the chicken breast was very dry and kind of hard. Can someone help me with a couple of questions? At what temp should I take chicken breast off the smoker. I have always read that chick must be cooked to 180 to be safe. How long does chicken normally take. This was on 4 hours. Is that too long.?

Chicken breast we take off at 160? they will continue to rise temp for a bit while they rest.
Breast should take 2 to 3 hours at pit temps of 225 to 250?.
Dark meat needs to be taken to 180-185? and that normally takes about 4 hours.
