How to cook Cornish Game Hens?

I usually grill them indirect (whole birds). I like to put a piece of lemon and a slice of apple in the cavity (after I have salt and peppered the cavity).
Rub the exterior with oil and season to your liking (I personally love Steve Petrones rubs).
It takes about 45 minutes at 375 degrees.

I'm also thinking on dong a brine on them. Nice reminder to give these a try again, thanks. Love them, just keep passing them up and saying "maybe later" when I'm at the market lately.

I'd really like to spin about 4 whole with aromatics/citrus sutffed in the cavity when I do them.

The simple spatched/grilled looks great though for a simple quick one.
 
I saw a Thanksgiving special Alton Brown did on The Food Network that he spatchcocked them and cooked them on a paninni grill. Looked pretty neat. You can probably find the recipe on The Food Networks website.

If you want to have a little fun, make what I jokingly call "Beer Can Pigeons." Use those individual serving size juice cans, and make them just like beer can chicken.
