I'm doing four pork butts for the 4th, looking for a "what would you do", how much smoke wood would you or do you use for a cook of this amount.
Approx weight..28lbs raw weight. Thanks

Hi Bruce,
When cooking butts, I usually use 1/4 - 1/3 wood to the amount of charcoal ( I use lump ).
Caveat: I always let the wood burn down to coals before adding the meat. I get a real light wispy smoke, but as the butts are in the WSM for a good stretch of time, they pick up a lot of smoke flavor. There's nothing like a good butt cooked for a long spell, soaking up some nice mellow hickory or pecan smoke.
Just my $.02

Jim
