How much pot roast for 16 people?

I have my annual camping trip coming up. We've been doing this for 18 years and I'm switching up the menu a little. I'm planning to make pot roast ala Stogie. It's 16 possibly 18 of us for dinner on Saturday night. We are all guys and we eat a big breakfast and just kind of snack for lunch so at dinner we are hungry. I'm not sure of the yield on chuck roast? I'm guessing it will be similar to pork butt around 50%. I'm planning to use both racks on my 18" WSM. Hoping to find a foil pan to hold 2 chuckies each. I'm tempted to just cook the 4 biggest ones I can find. Maybe around 20 lbs. I'm thinking maybe chuck roll and butchering it but I've never done that. I'm also going to add carrots, turnips and whatever other root veggies I can find to the pan towards the end. I was thinking I would make some mashed potatoes on the side to serve with the pot roast and gravy. That will be the whole meal except maybe some rolls. Any input would be appreciated?

By the way when I say camping we set up a 10x20 canopy just for the kitchen. We have 2 - 4 burner camp chef stoves with 12" burners, kitchen sink with hot water, WSM, 4 full size chafing dishes, pots, pans, griddles, etc. We have been buying things for 18 years so much so that we don't even bring everything.
 
i cant add anything on technique, but i would say definitely 20lbs. i feed my family of 6 with a 5lb roast, and that is 2 adults, 2 teens, and 2 little ones with just enough left over for husbands lunch the next day.
