How much meat for 60?

Need to draw on the experience of this forum. A friend has asked me to cook for a party on Sunday. Probably around 60 people (all asked to bring covered dish/dessert). Figuring there should be a lot of sides/appetizers.

The host wants ribs, butts and beef as the meat offerings. I'm figuring 15 slabs of babybacks, but not sure on how many butts, and whether to go with briskets or chuck roll (again don't know the amount). I'm not buying the meat, just cooking it so price isn't an issue. He'll buy whatever I suggest.

BTW, I'll be cooking on the huge offset, not a WSM, so space isn't a consideration either.

Ok seriously now...your cooking on an offset...mm...im not sure you would want to do that...food tastes much better on a WSM

lots of pork butt ....but i have no clue about amounts...but i think it all sounds good....bryan would be proud of ya if you went with the chuck roll also...but if your doing pork butt ...dont know if you want to do chuck roll also...neways.. good luck...
 
two weeks ago I cooked:

12* brisket
14* butts (2 x 7*)
4 slabs spare ribs
4 3.5* chix

I had about 25 people and various and sundry sides, and there was twice as much food as we needed. However, not a group of big eaters.
 
I've done 2 cooks since December for 60-70 people. Pork butt is the cheapest way to go, a 6-7 pounder will feed 10 people, on average. You might do a few slabs for variety, but it gets expensive...I'd do spares instead of babybacks. I wouldn't even attempt brisket on an offset, but that's just me.

Note that you might wanna do the pulled pork well in advance, not the day of. It reheats well.
 
Andy, what kind of pit do you have? I was over at a guy's house today and he has a 26" Klose or something in that size. He was doing 3-12 pound full packer briskets and they looked great. Looked like he had room for 2 6-8 lb butts also.

3-4 butts, 2-3 briskets, spares maybe 8-10 racks and you should be ok.
 
Greg... it's a homemade pit. 24 x 24 firebox offset from a 5 foot long by 3 foot wide tank. I could easily do 12 full slabs in one side of the chamber and probably 12 butts (7's) over 3 or 4 packers on the other side. It's built on a trailer and taking it's first ride this weekend. I'm just a little worried about the driver (me)!!
