Well, what an odd BBQ experience. Put them both on (with water in the pan) and the temp increased much quicker than I anticipated. But, had a loong stall at 170, and again at 180ish. Ended up taking one off at about 10.5 hours, with an internal temp of 195, and the other one off at about 11 hours at 193 degrees F. Quick cook, but they were both tender and tasty.
