How long can you hold a Brisket?

Good day all,

I'm planning my biggest BBQ ever for this Sunday and am wondering if it is possible to hold a brisket for 4-5 hours wrapped in a cooler? Will there be any side effects doing this? Will the bark hold or do I need to put it on the grill/smoker for a bit to firm up? Normaly I would plan on the brisket to finish an hour or so before eating, but I need to use the smoker for ribs and beans after the brisket comes off a midnight cook.

Thanks in advance!

P.S. I'll start the cook thread on Saturday night with loads of pics! Cause we all like pic's

Are you cooking just one brisket?
If you're smoking it overnight, could you put it on the bottom rack and do the ribs on top over the last several hours for the brisket?

Sorry I should have been more detailed. I'm doing 2 full packers overnight, then the next day I'll be doing 8 racks of rib's and a huge batch of beans under the ribs. I won't have room on the smoker

Guess I should have bought 2 smokers, lol...

Thanks for the fast reply though!

I've held butts and brisket a little more than 4 hours with no problems. Just wrap them well in heavy-duty foil and stuff that cooler full of towels and you shouldn't have any problems.

As far as non-heat-related issues, I assume the roasts continue to cook for a bit when wrapped and held this way. I haven't had any problems with them overcooking this way (I have certainly done a bit of overcooking ON the smoker

) but it could happen.

I've been listening to the first BBQ Central Show Brisket Roundtable podcast with LeAnn Whippen, Fast Eddy Maurin, Jim Minion and Ray Lampe.

Dr. BBQ said he liked to pull his briskets off of his BGE 4 hours before turn-ins, so if he doesn't have a problem with that, you shouldn't either!

Very funny description by LeAnn Whippen about how she selects a brisket.
