OK, going to a block party later on today and so I decided to do a couple of small pork butts and a few racks of baby backs to bring to the party.

The butts were the boneless variety that you get from Costco, and the biggest pack the wife could find was 13 lbs, so figure 6.5 lbs per butt.

Put them on my WSM at around 11:45 last nightand was running at around 250 for most of the night till i fell asleep.

Woke up at 8:15am to my wife asking what that beeping noise was. Must have nearly run out of coals, and the pit temp was at 200 and dropping. Butt internal temps were still at 165-170, so i quickly added more coals to bring the pit temps up, but they probably got to 270 for the next 3 hrs.

It was too late for the baby backs at that point, so I scrapped that idea.

Pulled the butts off at 11am, and they were probe tender for the most part, and reading about 195-210 throughout.

Let the butts stand unwrapped, while I filled a cooler full of super hot tap water, let that sit for about 25 minutes. Drained cooler, dried it off, and put a dry towel in bottom. Tightly wrapped the butts in foil, and put them in with another blanket on top.

How long do you think they will keep in the cooler?will I make it to 3pm? If not, what are my options??

Thanks everyone!

i have held pork butts for 5 hours and when i went to pull them, it was still too hot to pull without gloves. You'll be fine.

Thanks guys! I had it in the cooler till 4:30, periodically checking with the Thermoworks instant read. When i took it out to pull, it was 145-150. I feel much more at ease now.

Thanks for the advice and help!
