How do I finish butts in the oven?


 
Another question....

I'll be freezing this batch for consumption on Friday. Should I still let it rest or pull and freeze? I've froze leftovers before, but I've never froze immediately after Q'n.

Ron, the last time I did tj=his I foiled and put in a 300 degree oven.I also used my et73 to track the temps while in the oven
 
thanks. I had them in the oven uncovered but someone responded on my other thread and I went ahead and covered them.

You could put them in the oven foiled or not. Make sure to use a drip pan.

When you store the pork for another day, it's still best to let the meat rest and then pull it and then freeze it (or just put it in the fridge depending on the length of storage time). Resting meat is necessary in order to redistribute the juices. Otherwise all the juices will run out and the meat will be dry.
