So I'm going to use the apple brine and smoke this 20lb turkey.

I haven't found anything about hr's/lb. What temp and for how long per pound should I cook it please?

I just need it cooked by 5:00pm on Thanksgiving.

Thanks,
Bnb

This is just my 2nd smoke, and thanks to everyone's recommendations and experiences my 1st smoke of 2 pork butts and a brisket were perfect. So I just need some help here.

Brandon,

I am also using the apple brine and cooking a 20lber.

From reading other posts, I am shooting for the cooker to be in the 325 - 350 range. The ratio I saw was approx. 13 minutes per lb.

13 * 20 = 260 / 60 = 4.3 hours

Also, brined birds tend to cook faster than unbrined, so it may be a little quicker. Better early than late. You could always wrap it in foil and put in a towel lined cooler to hold until dinner time.

Good luck and let us know how it turned out. I hope to remember to take pictures this time. If I do I'll post them tomorrow night.

Thanks for the replies. I will also try to remember to take pictures this time.

Now I just need to find some kosher salt or figure out how much canning a pickling salt to use.
