Hot and Fast Chicken Recipe from Cooking topics on 14.5

Has anyone done Hot and Fast chicken on a 14.5 WSM? I don't know if I should remove water pan or just line with foil. I really would like to see if a different taste is achieved from the drippings hitting the coals and turning to smoke.
 
High heat on a 14.5 yesterday for chicken, all vents open, grommet out, hot water in the water pan, started with the therm pinned, finished
at about 320 an hour and a half later. 3/4 chimney and 3 chunks of hickory, fire going about 20 minutes before the chicken went on. This was yesterday for Smoke Day.
Started from frozen. All on the top rack. It worked out very well.
