Horse neck clam ceviche

We do a real nice 4th of July thing at our cabin every year with about 15-20 people.
Last year I picked some clams from the beach and turned them into a ceviche side dish.

Blanche in boiling water, put in ice water then skin
I used lime, salt, pepper, red onion, cilantro, avocado, tomatoes, jalapeños.
Just mix to your personal liking let it set 30 or so minutes and it will turn out great.

Admittedly I did this to mess with some of my guests.
Our guests were close friends and razzed the living heck out of me because it looked just wrong :).
Served with corn chips and it was not only a crowd pleaser it was gone fast.
