Hong Kong noodles wok stir fry

looks tasty. making me want a late night snack.
Leftovers for lunch tomorrow. Ranch 99 FTW! They have a great fresh noodles selection. And the dried shrooms and bok choy were from there too (and the finishing green onions once plated.). Home ground on the pork shoulder.

if you'd like to learn about Hong Kong noodle dishes and the knowhow behind making this cook, I recommend you start with this highly detailed recipe. my cook above is a crash of this recipe and my own knowhow from learning how to wok over the past 10+ years. there are some key secrets to a good sauce, as in the mushroom water that comes from rehydrating the shiitakes and black fungus is the base for the sauce's flavor and then you're adding in other stuffs (chicken powder, sugar, dry sherry, oyster sauce, soy sauce, sesame oil).

feel free to ask any questions and i'll do my best to answer them. enjoy this read:
