homemade summer sausage

Hi its been a while since my last post and I been thinking about trying to make homemade smoked summers on my WSM.

Just wondering if anyone has any links to real good recpie ideas or has any input of their own about making these badboys from scratch.

2 pounds ground beef
1 cup cold tap water
2 tablespoons Morton Tender Quick
2 tablespoons liquid smoke
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon ground black pepper

1. Combine the dry ingredients and mix together. While mixing the beef and water (the kitchen aid mixer works well), gradually add the dry ingredients and mix everything well.

2. Put the mixture in an air tight container and let sit in the refrigerator for 24 hours. After 24 hours, divide mixture in half and shape into 2 rolls. Wrap each roll tightly in foil, 2-3 layers thick, twisting the ends to seal. Poke holes in the foil to let fat and air escape.

3. Place on a rack on cookie sheet and bake at 325 degrees for 1.5 hours. Unwrap to cool.
