Here's what I found to do when I was home alone because the wife and daughter were up registering for classes for next year. Eat like a king.

If you shop at Costco, I HIGHLY recommend these hashbrown potoatoes. Have always passed on them and so sorry I did. They are now a staple around here for quick and spur of the moment. Can wait to take them camping.

Great looking rack Jeff. My SO goes to her mother's one weekend a month, some of my most enjoyable cooks are during these times. Can take my time, listen to the music I want to listen to, drink what I want to drink and eat when I want to eat. I really enjoy these cooks, maybe a bit too much

The ribs looks FANTASTIC! But whats more in that milk box then grated taters and maby an egg wash?(besides all the E numbers)?

Ribs look great. I am going to try my first attempt with BB's on the kettle this week. How many coals did you start (minion method?) and what were your vent settings? I've done many ribs on my ECB but want to give it a shot on the kettle.

I light 8 coals and one small piece of hickory in the chimney and use 3-4 pieces of wood mixed in the unlit. I shut the bottom completly off at around 210* and the top to 50%. I can ride at 285 for the 5 hours.

For me, 285 vent is around 250 at grate. I don'd dare open the lid for 3 hours. One quick peak and your temps will soar.
