B Bryan S TVWBB Olympian Jan 1, 2008 #3 Yep! High heat is high heat. The brisket knows no different if it's being cooked on a WSM, Offset, Brinkman....... The high heat cook for flats is the way to go IMO. Never tried it on a packer yet.
