Hello,
I am going to do some beef ribs today. I would like to do em high temp like I do brisket flats (they always turn out great), I have not had much luck with low temps in the past for these. Does anyone have a good basic sauce recepie for these. Also any advise on the cook?

Hi,
I can't really help you out on the high heat method of doing beef ribs, but what I did, worked out very well for me. I did STD method, all vents wide open, water in water pan, and let 'er rip. Lots of wood on top of lit charcoal. This took about 6 hrs to cook. I got a nice smoke ring on the ribs. The beef ribs turned out fantastic. Here are the pictures.
I hope this helps.

I like to do my beef ribs as I do my rib roasts, in the 200º range. The meat turns out silky smooth and tender, kinda like Prime rib on a stick!

Darn Larry! Nice meaty looking beef ribs there! That is the key with these. Look for very meaty ones. Or, they will turn out like dry jerky!
