High heat - yes!


 
OK, I'm convinced. I had some issues I posted this morning, but the end result was great, and no overnight. I cooked unwrapped for about 3.5 hours till 160 internal, then another 2.5 to 190. Let it rest for an hour, and the results were excellent. My wife - a tough critic, esp when it comes to "shortcuts," said it was even better. I let ll the juices mix in and be absorbed by the meat.

Sold all fifty sammies with many return customers. I'm convinced.
