High heat cooking


 
you can cook em like that if you wish but you dont have to. i have tried fast and hot a few times but i like the results of low and slow better. i am probably just not that good at it.

i like the larger buffer of time to check for tender and done temp of birds with low and slow tahn sitting there waiting and frequent checking for high fast requires.

its all just personal preference. i would suggest trying both methods and see whichyou prefer. there are no real rules for BBQ except maybe dont use construction materials for your cook fire and gas grilling isnt bbq...
 
You can certainly cook a turkey low and slow if you want to. And there are a couple of posts about it in the Turkey Talk forum. It depends on what you are looking for in the finished product. Poultry in general comes out better at higher temps -- at least in my experience it does, especially the texture of the skin.
 
Also certain meats with little to no internal fat, do not benefit from low cooking temps. For the most part, I pretty much high heat everything these days.
