Hello! My name is Doug Wiles
I am a long time lurker, but I have never done a forum before (be gentle). I have always loved to grill and cook for my family and friends. I started out with a cheap gas grill a few years ago, then my parents bought me a Char-Broil InferRed two burner gas grill for my wife and I. It is a great little grill, but it cooks hot and fast. It is great for burgers or dogs but anything else and there is no chance to control the heat. I have always had a fascination with low and slow, traditional barbecue. This led me to start watching videos on YouTube and trying to learn everything I could about the craft of low and slow barbecue. The first charcoal grill I bought was Weber One Touch Gold, I made a promise to myself that I would not upgrade to a bigger smoker until I could master the art of barbecue on my kettle grill. It took me about two and a half years to feel like I had gained enough knowledge to expand my family of grills and smokers. This last June (2016) for my birthday I bought myself the smoker that I had dreamed of owning from the first time I fill my charcoal chimney. I bought the Weber Smokey Mountain 22.5" (Go Big or Go Home!), and the learning curve starts all over again. Thank you for letting me be a part of the group and I hope to one day be able to pass on some of my gained knowledge with you.
