Hi Heat Butt QUESTION

Have a 7.5 lb butt defrosting and plan to smoke it on Friday. Decided to give high heat cook a try and have read most of the posts but don't really see how long approx cooking time per lb may be--seems like it might be around an hr per lb? Or will a seven pounder come in even quicker? Plan to cook @ 300.

Plan on just over an hour/lb at that temp, like 1:15 or so. Actual time/lb depends on actual cooktemp, the temp of the roast, etc.
 
Thanks! And if I went a bit higher w/cook temp, say @325 would I knock off that extra 15 mins or so? I understand this is all approximate, just trying to figure when to start.

Hello George, I just did two high heat butts this past weekend, they weighed about 8 pounds each. total cook time was 5 hrs @ 350. The first 3 hours cook uncovered, then 2 hours in an aluminum pan covered, all at 350, then I let them rest in the pans covered loosely for about 1 hour. so the total time was about 6 hours. The pork was so tender that bone could be pulled out with hardly any effort, and the flavor was awesome. I took the juice that had collected in the pan, skimmed most of the fat out, then poured the juice back into the shredded pork, you didn't need to add any other sauce. Hope this helps. Good luck

George-- Probably. It is just approximate though. As Bill notes, you can foil and that speeds it up further.
 
Thanks--I think I'll go for 325 and see what happens and figure roughly 7 hrs --this is an experiment as I am fairly set in stone on low and slow for butts but I'll see what happens. Not really necessary to see how quick I can cook a butt--maybe someday. Just now don't have 14+ hours so a good time to give high heat a try.
 
George. For me a seven pounder @ 325 lid runs about 9 hrs, it will stall out at 165 for a while,
after that I just let it go till its tender.
