Hi all, I'm Donald. Longtime griller, moving into the smoking realm. Doing kettle cooks with my OTP. Also working on customizing the OTP some. Will either mod with a Cajun bandit or go full on to a WSM, WHICH IS WHAT I REALLY WANT.

Ran a 2 hour cook of some baby backs for the 4th with cherry chips. I believe they were the best at the party. Besides the other guys did oven cooks. No smoke... including a bourbon sauce to finish.

Anyway, I will post pics of my grill cart mods in an appropriate post thread...
