5:30 - Just right!

My transplanted Texan neighbor sat at my table and stuffed himself with my brisket. He gave it the thumbs up!

Seriously, it turned out just right!

Typically, you slice brisket rather than pull it, but yes, very tender and I had about 1.5 cups of drippings recovered while it was in the pan covered with foil.
