Hey everyone. I've lived in Pittsburgh for close to 10 years, but grew up in Texas. Did a little Q-ing some time ago on a Klose offset, but have been out of the game for a good while. After being disappointed time and time again with most local BBQ restaurants I decided I just need to make my own. I've got 3 smokes done in the last month with my new 22.5" WSM (Spares, Pork Shoulder, Brisket) and I'm pretty happy with this simple piece of machinery. Looking forward to learning more from this forum!
